This month's issue of Sip, Sample & Savour is chock-full of luscious summer indulgences in Stratford and Perth County.  Stratford has been attracting a lot of media attention this summer, due in no small part to its burgeoning culinary scene. Need something to Sip on? Look for a feature on Stratford's very own Stratford Brewing Company, where local brew master Joseph Tuer makes a fine Pilsner in the tradition of the Czechs from Pilsen. A diverse range of local fare is used to prepare creative twists on culinary classics at The Parlour Dining Room. Savour the divine dishes concocted by Chef Max Holbrook, who mixes simple ingredients to create outstanding flavours.

STRATFORD BREWING COMPANY

Although Stratford has been home to various breweries since the mid-1800s, The Stratford Brewing Company is arguably the finest with the most staying power. Located on the south side of Stratford, this small, family-run business is headed up by Stratford native Joseph Tuer and his wife, Rebecca.

Its signature beer, Stratford Pilsner is traditionally brewed in small batches using the finest all-natural ingredients. Unlike many mass-produced beers, Stratford Pilsner is brewed to and bottled at  4.9% alcohol by volume (ABV). For efficiency's sake, mass production generally involves the use of high-gravity brewing methods which can elevate the fermented product to at least triple the desired ABV. To offset the high potency level, the product is diluted before it is bottled, thus compromising the quality of the beer.

As Joseph likes to say, "A Stratford Pilsner will delight the most discerning drinkers -- it's Beer... As You Like It."

Stratford Pilsner is available on draught at select bars and restaurants in Southwestern Ontario and Toronto and is now available at LCBO stores in Toronto, London, Kitchener-Waterloo and of course, Stratford.

THE PARLOUR DINING ROOM & GASTROPUB

Be sure to save room for one of the Parlour's sumptuous desserts. Their signature Pavlova, a baked meringue served with fresh raspberry and lemon sauce topped with whipped cream and sugar coated toasted almonds, keeps patrons coming back. And their Chocolate Marquis, dark chocolate mousse with a white chocolate truffle center all wrapped in white chocolate, is made exclusively for The Parlour by the Swiss Chocolatier at Mollet's Designer Desserts in St. Mary ’s.

THE CHISHOLMS BED & BREAKFAST

Centrally located, just minutes from downtown, the river and from the Festival Theatre, Dianne and Kent Chisholm of The Chisholms Bed and Breakfast take great pride in catering to special dietary needs without compromising flavour.

Many of their guests prefer healthier alternatives to the standard fare that is generally a part of people's morning meals. Breakfasts are planned according to current guests' specific requirements, using ingredients that are free of lactose, gluten, sugar or nuts, if necessary.

Always looking for new, healthy and delicious alternatives to standard breakfast ingredients, Dianne painstakingly sources items from local shops such as Flour of Life Bakery, and Gentle Rain Natural Foods; from farms like McCully's Hill Farm Market in St. Marys, Perth Pork Products outside of Sebringville, and Sheldon Berries in Lakeside; and of course from the myriad vendors at the Stratford Farmers' Market.

A sampling of the healthy yet delicious options that await guests in the morning:

Mouth-watering quiche, prepared with nutty, buttery, lactose-free Swiss cheese.

Raspberry muffins - fluffy, tangy, sweet, and easy on the waistline.

Fresh pears - lightly poached and spiced just right to complement the fruit's natural sweetness.

Guests will be summoned to the table by the Festival Trumpeters for a three-course breakfast at 8:30 am allowing them to enjoy a leisurely breakfast in the company of Dianne & Kent and other guests, and still get an early start on their day's adventures which may include the Stratford Festival Backstage and Costume Warehouse Tours, Meet the Festival Chats, and Talking Theatre, at Tom Patterson Theatre and Studio Theatre.

CULINARY FESTIVAL UPDATE

Never have we been witness to so many people eagerly anticipating the passing of summer, or more accurately, the arrival of fall. The Annual Savour Stratford Perth County Culinary Festival ushers in the autumn season with a bountiful celebration of all things local and edible with two days of markets, live entertainment, demos from guests chefs and authors, barbeques, craft beers and Ontario wines and the pinnacle event, a tasting event that pairs over 30 local food producers with some of the hottest chefs around.

The festival's website, savourstratford.com, has just been launched and provides information about and for event participants including vendors, high-profile chefs, authors and culinary experts, sponsors, volunteers, merchants and attendees. Although most events and attractions are free, a few require advance tickets. Space is limited for various events, so please visit the website to find out how to purchase tickets.
